When most people hear the word starch, they think of potatoes, rice, pasta, or bread. Starch is one of the main sources of energy in our diet, and under normal circumstances, our body breaks it down into glucose, which it uses as fuel for cells. However, there is also a special form of starch that behaves quite differently. It is called resistant starch (Resistant Starch – RS). Unlike regular starch, it is not digested in the small intestine but passes through to the large intestine, where it becomes a source of nourishment for the gut microbiome.
